Sproutcraft Vegan Cheese Class & Tasting

Chris will be discussing an introduction to lactic-acid (coagulation) type curd cheeses.

The class will cover using both cashew and almond nuts to produce cream cheese, yogurt, and more advanced aged, ripened type wheels. This class includes the processes of emulsification, fermentation, curd setting, pressing, forming, and curing along with the different types of cultures. Basic nut milk chemistry and the relation to dairy milk chemistry are elaborated upon. Other topics will include: flavorings, essential equipment, and storing methods.

We will be tasting some of the cheeses taught in the class. There will also be cheeses available for purchase after the class concludes.
